Pan Seared Chicken
  • Servings: 4
  • 4 boneless chicken breasts
  • 1 cup plain yogurt
  • 1 lemon juiced
  • 6 T. cucumber minced
  • 3 chives sliced
  • salt and pepper to taste
  • crushed pine nuts for garnish
  1. Method: In a saute' pan with olive oil, sear the chicken breasts on both sides, finish in an oven @ 350 or turn heat on pan to low and finish cooking in the pan.
  2. Sauce: After all ingredients have been prepared, mix together and adjust seasoning and spoon over chicken and garnish with pine nuts.
I got this recipe while watching a cooking demo at Macy's one Saturday afternoon. The chef was from a local restaurant called Jacksons. They were also having a drawing for a set of Al Clad cookware which I WON. Enjoy!.....Karen
