Pancakes from Scratch

INGREDIENTS
  • 1 egg, beaten
  • 1 cup milk
  • 1 Tbsp. sugar
  • 1 Tbsp baking powder
  • 1 tsp. salt
  • 1/4 cup melted butter or margarine
  • flour as needed
DIRECTIONS
  1. Beat the egg and add the milk. Mix in enough flour to achieve desired
  2. consistency. Stir in sugar, salt, and baking powder. Add the melted
  3. butter last and mix well. Grease and heat skillet or griddle to
  4. desired temperature. Pour or ladle batter onto heated griddle and
  5. turn when top is bubbly. Continue to cook until other side is golden
  6. brown.
  7. Makes about 6 pancakes.
  8. If you are concerned about fat, in your diet simply use skimmed milk,
  9. omit the butter, and use a cooking spray to lubricate the griddle. If
  10. you use an egg substitute, decrease the amount of milk or add more
  11. flour. If you must restrict your intake of sugar, simply omit or use
  12. a sugar substitute that is specially made for cooking (there are a number of them in the market).
