Parchi Chili

INGREDIENTS
- 1 green pepper
- 1 red pepper
- 1 carrot
- EVOO to coat pan
- 1 onion
- 3 crushed garlic cloves
- season to taste: chili powder, cumin, paprika
- 1 can of each: black beans and kidney beans,
- 1/2 can of chickpeas
- smoked chipotle peppers
- 1 can of fire roasted crushed tomatoes
- 1/2 cp veggie stock
- 1/2 cp water
- cilantro
- a pinch of sugar.
DIRECTIONS
- Sautee peppers, carrot, and onion in olive oil for approx. 15 minutes.
- Add garlic, chili powder, cumin, and paprika. Lowered flame
- Add black beans, kidney beans, and chickpeas.
- After 2 min add smoked chipotle peppers and crushed tomatoes. Bring to a boil.
- Add veggie stock and water. Let boil for 2 minutes.
- Simmered for a half hour.
- While cooling add cilantro and sugar.
