Parmesan Tilapia

  • 6 pan-dressed tilapia fillets
  • 2 cups dry breadcrumbs
  • 3/4 cup grated parmesan cheese
  • 1/4 cup parsley, chopped
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/4 teaspoon basil
  • 2 teaspoons salt (to taste)
  • 1/2 teaspoon pepper
  • 3/4 cup margarine or cooking oil
  • lemon wedges
DIRECTIONS
  1. Combine dry ingredients. Dip tilapia in melted butter or oil and roll in crumb mixture.
  2. Arrange the tilapia fillets in well-greased 14" by 9" by 2" baking dish.
  3. Bake in preheated 375°F oven for 20-25 minutes or until tilapia fillets flake easily.
  4. Garnish with lemon wedges.
