Pasta Primavera

  • Servings: 4
  • 1.5 cups broccoli
  • half of whole onion, diced
  • 1 zucchini, slice and quarter (up to 2 next time?)
  • 3 garlic cloves, minced
  • 6 basil leaves, chopped
  • 1/2 cup snow peas
  • 1/2 cup frozen peas
  • 2 tbsp olive oil
  • 3 tbsp butter, divided
  • Sauce:
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese
DIRECTIONS
  1. Cut broccoli, add to bowl with snow peas.
  2. Cut zucchini, set aside
  3. Cut onion and garlic, set aside in bowl
  4. Chop basil leaves, set aside
  5. Boil small pot of water, add salt
  6. Add broccoli, cook 1 minute
  7. Add snow peas, cook another 30-60 seconds
  8. Drain, rinse with cold water, set aside
  9. Bring pasta water to boil
  10. Add 1 lb angel hair (do 3/4 lb next time)
  11. Cook ~2-3 minutes, drain
  12. Add 2 tbsp butter and 2 tbsp olive oil to large pan
  13. Heat and melt butter
  14. Add garlic, onion, cook 1-2 minutes
  15. Add zucchini, cook another 1 minute
  16. Set aside
  17. Add chicken broth, white wine, 1 tbsp butter
  18. Heat to low boil for 1-2 minutes
  19. Add heavy cream (next time do 1/2 cup + 1/2 half and half?)
  20. Add Parmesan cheese
  21. Salt and pepper to taste
  22. Add basil
  23. Add all veggies
  24. Add frozen peas
  25. Add pasta
