Pasta with tomato and chorizo sauce

INGREDIENTS
  • A good splosh of olive oil
  • 1 tsp dried oregano
  • 1 onion, chopped
  • 1 clove of garlic, finely chopped
  • 1 tin of chopped tomatoes
  • 1 tsp tomato puree
  • a splash of red wine vinegar
  • salt & pepper
  • fresh basil, ripped
  • Chorizo, chopped or sliced
  • Pasta
DIRECTIONS
  1. Heat the olive oil in a frying pan. Add the oregano and let it sizzle for a few second. Add the onion and cook until transparent. Add the garlic and cook for a few minutes.
  2. When the onion and garlic are cooked, add the tomatoes, tomato puree and red wine vinegar and bring to the boil. Season.
  3. While the sauce is reducing put the pasta on to boil. When the pasta is almost ready, fry the chorizo in a seperate pan until the oil starts to come out of the sausage.
  4. Turn the heat off the sauce, add the fried chorizo and the oil, then stir in the basil.
  5. Serve with plenty of parmesan.

I adapted this from a Jamie Oliver recipe. It's quick to make when you've been at work all day! Using one tin of tomatoes serves 2 big portions.
