Paula Deen's Red Potato Salad

  • 12 cup cubed red poatoes
  • 1 cup chopped green bell pepper (I sub with jalapenos)
  • 1/2 cup minced red onion (I chop a little larger)
  • 1/2 cup extra-virgin olive oil
  • 1/3 cup red wine vinegar
  • 2 tablespoon Dijion mustard (I sometime sub with brown mustard)
  • 2 tablespoon mayonnaise
  • 1 1/2 teaspoon salt (I add to taste)
  • 1/2 teaspoon ground black pepper (I add to taste)
DIRECTIONS
  1. cook potatoes, covered in boiling water, 10 minutes or until tender;
  2. drain well and cool.
  3. in small bowl, whisk together remaining ingredients, pour over potato
  4. mixture, tossing gently to coat, cover and refrigerate. (I like to sever warm)
