Peach Blueberry Cobbler
INGREDIENTS
- For topping:
- 1/3 cup white sugar
- 1/3 cup brown sugar
- 1/2 teaspoon baking powder
- 1 3/4 cups all-purpose flour
- 1/8 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup butter, coarsely chopped
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup pecans, chopped
- For filling:
- 4 cups peaches, peeled and pits removed, sliced 1/2" thick
- 4 cups blueberries, frozen or fresh
- 1/2 cup white sugar
- 4 teaspoons cornstarch
DIRECTIONS
- 1. Preheat the oven to 375 degrees.
- 2. In a medium bowl prepare topping: stir together white and brown sugars, baking powder, flour, salt and cinnamon.
- Use a fork or pastry cutter to blend in the butter, egg and vanilla.
- Add rolled oats and pecans - mix thoroughly. Dough will be crumbly. Set aside.
- 3. In another bowl prepare filling: combine peaches and blueberries.
- Add sugar and cornstarch, stirring to coat. Spoon into 9x13 baking pan, spreading evenly. Crumble reserved topping evenly over the fruit layer.
- 5. Bake in preheated oven for 45 minutes, or until top is golden brown.
- Serve warm with whipped cream or vanilla ice cream.
