Peach Glazed Chicken

  • Cooking Spray
  • 1 t vegetable oil ( I use olive oil)
  • 1 pound chicken breast tenders
  • 1/2 cup peach preserves
  • 2 T balsamic vinegar
  • 1 green onion, chopped
  • 1/4 teaspoon black pepper
  1. Coat a large non-stick skillet with cooking spray: add oil and place over medium high heat until hot.
  2. Add chicken and saute 5 minutes on each side or until done.
  3. Remove from skillet and keep warm.
  4. Reduce heat to low; add preserves and remaining three ingredients.
  5. Cook, stirring constantly, until preserves melt and onion is tender.
  6. Spoon preserves over chicken.
