Peaches n' Cream Pie

INGREDIENTS
  • 3/4 C flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • small pkg vanilla pudding (not instant) (1/2 cup)
  • 3 Tablespoons butter
  • 1 egg
  • 1/2 cup milk
  • 1 Tablespoon sugar
  • 15-20 oz can sliced peaches-drain & save juice
  • 8 oz cream cheese softened
  • 1/2 cup sugar
  • 3 Tablespoons peach juice
  • 1 Tablespoon sugar
  • 1 teaspoon cinnamon
DIRECTIONS
  1. Combine first 8 ingredients in bowl, beat 2 minutes at slow speed - pour into 10" pie pan.
  2. arrange sliced peaches on batter.
  3. beat cream cheese, sugar and peach juice for 2 minutes.
  4. spoon over peaches to within one inch of edge.
  5. Combine cinnamon and sugar and sprinkle over the cream cheese mixture.
  6. Bake 30 to 35 minutes at 350 until golden
  7. refrigerate 2 hours.
