Peanut Butter & Jelly Thumbprint Cookies

  • Servings: 3 1/2 dozen
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup packed brown sugar
  • 2 egg yolks
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 2 cup all purpose flour
  • 2 slightly beaten egg whites
  • 1 1/2 cups finely chopped peanuts/walnuts
  • 1/2 cup jelly
DIRECTIONS
  1. Heat oven to 375 degrees. Beat butter and peanut butter. Add brown sugar, and beat until fluffy. Beat in egg yolks, milk and vanilla. Add flour, beat well.
  2. Shape dough into 1" balls. Dip balls into egg whites, then roll in nuts. Place 1" apart on greased cookie sheets. Press thumb into the center of each.
  3. Bake at 10-12 minutes or till ages are set. Fill centers with jelly. Cool on wire racks.
