Peanut Butter & Jelly Thumbprint Cookies
INGREDIENTS
- Cooking Time: 10 - 12 minutes
- Servings: 3 1/2 dozen
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup packed brown sugar
- 2 egg yolks
- 1/4 cup milk
- 1 teaspoon vanilla
- 2 cup all purpose flour
- 2 slightly beaten egg whites
- 1 1/2 cups finely chopped peanuts/walnuts
- 1/2 cup jelly
DIRECTIONS
- Heat oven to 375 degrees. Beat butter and peanut butter. Add brown sugar, and beat until fluffy. Beat in egg yolks, milk and vanilla. Add flour, beat well.
- Shape dough into 1" balls. Dip balls into egg whites, then roll in nuts. Place 1" apart on greased cookie sheets. Press thumb into the center of each.
- Bake at 10-12 minutes or till ages are set. Fill centers with jelly. Cool on wire racks.
