Peanut Butter Bars

INGREDIENTS
  • 1/2 cup butter or margarine, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup quick-cooking oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (6 ounces) semisweet chocolate chips
  • Icing:
  • 1 cup confectioners sugar
  • 1/4 cup creamy peanut butter
  • 1/4 cup milk
DIRECTIONS
  1. In a large mixing bowl, cream the butter, sugars and peanut butter until light and fluffy.
  2. Beat in egg and vanilla.
  3. Combine the flour, oats, baking soda and salt; stir into the creamed mixture.
  4. Spread into a greased 13-in. x 9-in. x 2-in. baking pan.
  5. Sprinkle with chocolate chips.
  6. Bake at 350° for 20-25 minutes or until lightly browned.
  7. Cool on a wire rack for 10 minutes.
  8. Combine icing ingredients; drizzle over the top. Cool completely.
  9. Cut into bars.
  10. Yield: 3-4 dozen.
