Peanut Butter Bars
  • 1 cup chunky peanut butter
  • 2/3 cup butter, softened
  • 1 teaspoon vanilla
  • 2 cups brown sugar, firmly packed
  • 3 large eggs
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1/4 cup powdered sugar
  • 1 1/2 teaspoons water
  • 1/4 cup semisweet chocolate chips
  • 1 tablespoon vegetable shortening
  1. Heat oven to 350 degrees. Grease and lightly flour a 13x9" baking pan. In a large bowl, with electric mixer on low speed, beat peanut butter, butter and vanilla until combined. Add brown sugar and beat until fluffy. Beat in eggs, one at a time, scraping side of bowl frequently. Stir in flour and salt; spoon batter into prepared pan. Bake 35 minutes or until golden brown and set. Cool in pan on wire rack 15 minutes. Meanwhile, in small bowl, combine powdered sugar and water until smooth glaze forms. In small saucepan, melt chocolate and shortening over very low heat. Drizzle glaze and melted chocolate mixture over cookie in pan. Set aside on wire rack to cool completely. cut cookie into bars.
