Peanut Butter Blondies

INGREDIENTS
  • 1/2 c flour
  • 1 t baking powder
  • 1/2 t baking soda
  • 1/2 t salt
  • 1/2 C nonfat sour cream
  • 1 C smooth peanut butter
  • 1/2 Capplesauce
  • 1 TBS vanilla extract
  • 1 1/2 C light brown sugar
  • 1 large egg
DIRECTIONS
  1. Preheat the oven to 350. Butter the bottom and sides of 11x7 in baking pan. Dust pan with flour and tap out excess.
  2. In large bowl, sift together the flour, baking powder, baking soda aned salt and set aside.
  3. In a separate large bowl, use an electric mixer to beat together the sour cream, peanut butter, applesauce, and vanilla. Add the brown sugar and then the egg and mix until well incorporated. Fold in the dry ingredients and, when well combined, pour into baking dish.
  4. Bake for 15 to 20 minutes or til toothpick is clean. Cut into bars.
