Peanut Butter Cheesecake
INGREDIENTS
  • 1 1/2 cups Pretzels, Crushed
  • 1/2 cup Butter, Melted
  • Filling:
  • 5 pkgs 8oz Cream Cheese,
  • Softened
  • 1 1/2 cups Sugar
  • 3/4 cup Creamy Peanut
  • Butter
  • 2 tsp Vanilla
  • 3 Eggs
  • 1 cup Peanut Butter Chips
  • 1 cup Semi-Sweet Chocolate Chips
  • Topping:
  • 1 cup Sour Cream
  • 3 Tbsp Creamy Peanut Butter
  • 1/2 cup Sugar
  • 1/2 cup Unsalted Peanuts, Finely Chopped
DIRECTIONS
  1. Oven Temperature: 350°F
  2. *In a small bowl, combine pretzels and butter
  3. *Press onto the bottom and 1 inch up the sides of greased 10-inch springform pan
  4. *Place pan on a baking sheet; bake at 350 degrees for 5 minutes; cool in pan on wire rack
  5. *In a large bowl, beat cream cheese and sugar until smooth; add peanut butter and vanilla and mix well
  6. *Add eggs; beat on low just until combined; stir in chips and pour over crust
  7. *Return pan to baking sheet; bake at 350 degrees for 50-55 minutes or until center is almost set
  8. *Remove from oven and let stand 15 minutes (leave oven on)
  9. *For topping, in a small bowl combine the sour cream, peanut butter, and sugar; spread over filling
  10. *Sprinkle with nuts and bake 5 minutes longer
  11. *Cool on wire rack for 10 minutes; carefully run a knife around the edge of the pan to loosen; cool 1 hour longer
  12. *Refrigerate overnight; remove sides of pan; refrigerate leftovers
