Peanut Butter Fudge

  • 1 1/2 sticks butter
  • 3 c. sugar
  • 7 oz. can evaporated milk
  • 7 oz. marshmallow creme
  • 10 oz.. jar peanut butter, creamy or chunky
  1. First check your candy thermometer using the instuction in the chocolate fudge recipe. In a heavy pan mix together butter, sugar, evaporated milk, and marshmellow creme. Cook over medium high heat, stirring constantly until sugar is dissolved, wiping down pan with moist cloth to prevent sugar crystals forming and making candy grainy. Cook to softball 238F. Remove from heat, add peanut butter. Mixer with a hand mixer until candy is blended, smooth, and creamy. Pour into a well buttered 9"X13" pan. Cool completely overnight, then cut into serving pieces. Freezes well.
Peanut butter fudge is my daughter's favorite. It is creamy and delcious. She prefers creamy peanut butter, I like chunky better, so we make both.
