Pears poached in Earl Grey Tea

- 4 pears
- 4-1/2 cups strong Earl Grey tea
- juice of 3 limes
- 1 cup sugar
- 1 cup cream
- vanilla ice cream
DIRECTIONS
- Prepare 4 cups of earl grey tea. After letting it seep, boil the tea down to 1.5 cups. Put tea in fridge overnight.
- The next day: peel the pears, cut them in half and core them. In a large saucepan, bring the tea, lime juice and sugar to a boil, stirring to dissolve the sugar.
- Add the pears and poach for about 10 minutes.
- Remove the pears and allow to cool.
- Continue to boil the poaching liquid until it has the consistency of syrup. Remove from stove and allow to cool.
- To serve:
- Divide the pears among 4 plates, spoon some of the syrup over them. Pour 1/8-1/4 of cup of heavy cream over each to mellow the syrup.
- Garnish each with a scoop of vanilla ice cream and serve
