Pecan Crusted Salmon
INGREDIENTS
- Servings: 4
- 4 (6oz) salmon fillets
- salt and pepper
- 2 Tbsp Dijon mustard
- 2 Tbsp butter, softened
- 1 1/2 Tbsp honey
- 1/4 c. dry bread crumbs
- 1/4 c. chopped pecans
- 2 tsp chopped fresh parsley
DIRECTIONS
- Sprinkle salmon w/ salt and pepper. Place skin face down on greased baking dish.
- Combine butter, mustard, and honey. Brush on fillets.
- Combine bread crumbs, pecans, and parsley. Spoon mixture evenly to top of each fillet.
- Bake at 450 degrees F for 10 minutes or until fish flakes evenly. Serve with whole wheat couscous and green beans almandine. Enjoy!!! :)
