Pecan Pie Muffins

  • 1 cup chopped pecans
  • 1 cup frimly packed light brown sugar
  • 1/2 cup flour
  • 2 eggs
  • 1 cup butter melted
DIRECTIONS
  1. Preheat oven 350 degrees
  2. Mix the first three ingredients together in a medium bowl. When well mixed make a well in the middle
  3. Beat eggs in another bowl untiil foamy. Then stir in the melted butter. Pour this mixture into the well you formed in the bowl of dry ingredients and stir until well mixed
  4. Place foil liners into cupcake pan. Fill each 2/3 full with the batter. Bake 20 -25 minutes. Remove from muffins from pan immediately and cool on wire rack. Makes 9
  5. You can also make these as mini muffins just be sure to grease the pans good, fill them almost full and adjust the baking time to 10 - 15 minutes or until toothpick inserted in midddle comes out clean. Makes 24
