Pecan Strawberry Coconut Cake
INGREDIENTS
- 1 white cake mix
- 1 c. oil
- 1/2 tsp. baking soda
- 1 pkg. (3 oz.) strawberry jello
- 5 eggs
- 1/2 c. milk
- 1 c. coconut
- 1 c. pecans or walnuts
- 1 c. strawberries sliced
- ICING:
- 1/2 c. butter
- 1 lb. powder sugar
- 1/2 c. cut up strawberries
- 1/2 c. coconut
- 1/2 c. chopped nuts
DIRECTIONS
- Combine cake mix, jello, oil and milk in a large bowl. Beat. Add 1
- egg at a time beating on medium speed after each egg added. Fold in
- strawberries, nuts and coconut. Pour into 3 greased and floured cake
- pans. Bake at 350 degrees for 25 to 30 minutes
- Blend all icing ingredients well and ice cooled cake
