Penne Alla Vodka

- Penne Pasta
- Sauce:
- 1/4 c. butter
- 1 thick slice cured ham, diced
- 2 T tomato paste
- 1 T chopped flat leaf parsley
- 5 T heavy cream
- 5 T vodka
- salt & pepper
- parmesan cheese (optional)
DIRECTIONS
- Melt butter in a pan. Cook ham, tomato paste, and parsley for 10 minutes. Stir in cream and vodka until alcohol has been cooked out.
- Meanwhile, cooke penne pasta in salty water (should taste like ocean water) until not quite al dente. Drain. Finish cooking pasta in the sauce. Serve with grated parmesan cheese.
