Penne Alla Vodka

  • Penne Pasta
  • Sauce:
  • 1/4 c. butter
  • 1 thick slice cured ham, diced
  • 2 T tomato paste
  • 1 T chopped flat leaf parsley
  • 5 T heavy cream
  • 5 T vodka
  • salt & pepper
  • parmesan cheese (optional)
DIRECTIONS
  1. Melt butter in a pan. Cook ham, tomato paste, and parsley for 10 minutes. Stir in cream and vodka until alcohol has been cooked out.
  2. Meanwhile, cooke penne pasta in salty water (should taste like ocean water) until not quite al dente. Drain. Finish cooking pasta in the sauce. Serve with grated parmesan cheese.
