Penne with Tomato Cream Sauce
INGREDIENTS
  • 6 oz. penne pasta, uncooked
  • olive oil or cooking spray
  • 1/4 c. chopped onion
  • 1 clove garlic, minced
  • 1 - 14 & 1/2 oz can diced recipe-ready tomatoes, undrained
  • 1/2 tsp dried basil
  • 1/4 tsp freshly ground pepper
  • 1/4 tsp salt
  • 2 tsp all-purpose flour
  • 1/4 cup evaporated milk
DIRECTIONS
  1. Cook pasta according to package directions, then drain and set aside.
  2. Coat a large non-stick skillet with cooking spray or olive oil and place over medium-high heat until hot. Add the onion and garlic, and saute until the onion is translucent. Add tomato and the remaining ingredients. Bring mixture to a boil. Cover, reduce heat, and simmer 10 minutes.
  3. Add pasta, stirring well. Cook over medium heat 2 to 3 minutes
  4. or until thoroughly heated.
