Pennsylvania Dutch Chicken Pot Pie
  • 1 stewing hen
  • 1 onion cut up
  • 2 carrots,sliced
  • 2 celery stocks with
  • tops cut up
  • Water to cover
  • salt
  • corn starch
  • Noodles: home made or I use
  • lasagna noodles which I boil
  • until soft enough to cut in
  • about 1 1/2 slices.
  1. Put all the ingredients except the corn starch in a soup pot.
  2. Bring to a boil and skim the top then put to simmer for a couple of hours or until hen is tender enough to pull apart.
  3. You have to use stewing chicken as you need the flavour.
  4. I have cheated sometime and used a fryer and added some chicken oxo crystals to taste.
  5. When it is tender set aside until cool and strain the soup but I keep the vegetable to put back in. My mother in law doesn,t. It is up to you. Put back in soup pot and put noodles in to cook. Boil until desired tenderness. I like mine with a little bite but husband likes them well done.

  7. taken off the bone.
My M-I-L gave me this recipe many years ago. It is a special occassion dish in our family.
