Pepper Jelly
  • 1 1/2 cups sweet red pepper, diced finely
  • 1 1/2 cups sweet green peppers, diced finely
  • 3 jalepeneo peppers, diced finely
  • (all above need to be seeded)
  • 1 1/2 cups white vinegar
  • 6 cups sugar
  • 1 bottle certo
  1. Stir all of above except certo in pot and bring to a boil.
  2. Boil gently for 6 minutes and add certo.
  3. Remove from heat and stir for 5 minutes so pepers do not rise to the top.
  4. Bottle.
I made this years ago and it goes great on crackers of any kind but I like it on Ritz. You can use only red peppers or only green peppers and add food colouring. It does not change the flavour. Should make between 5 and 7 bottles.
