  • pink curing salt
  • 1/2 lb pork and 1/2 lb of beef
  • 1/2 tsp of Anise
  • 1/2 tsp of allspice
  • 1/2 tsp cloves
  • 1/2 tsp black pepper
  • collagen casing
DIRECTIONS
  1. Step 1- Mix together all seasoning sin a bowl with both of the meats.
  2. Step 2-Mix well until meat is well seasoned.
  3. Step 3-Get a grinder and use right attachment for the meat.
  4. Step 4-Push meat through with a bowl under where the meat comes out of and use ice if it gets stuck.
  5. Step 5-once all meat is push through, get collagen casing.
  6. Step 6- Place casing on the tip attachment of your grinder.
  7. Step 7-push meat back in the grinder into the casing.
  8. Step 8-Move the casing along with the meat until there is none. Tie knots at the end of the casing so no meat escapes.
  9. Step 9-place Pepperoni in oven for about an hour and then let cool.
  10. Step 10-Slice and enjoy.
