Peppery Chicken

  • 8 skinned chicken breast halves
  • 2 T olive oil
  • 2 T soy sauce
  • 2 T honey
  • 1/2 t thyme
  • 1/2 t paprika
  • 1/4 t cayenne pepper
  • 1 T white vinegar
  • 1/2 t allspice
  • 1 t ground pepper
  • 2 C sliced mushrooms
DIRECTIONS
  1. Preheat oven to 375. Place chicken in a shallow dish. Combine oil, soy sauce, honey, thyme, paprika, cayenne, vinegar, allspice and pepper and pour over chicken. Marinate in the refrigerator for at least 1 hour.
  2. Bake chicken for 30 to 45 minutes. Surround chicken with mushrooms, spoon the sauce over them and bake 5 to 10 minutes more.
