Pernod Braised Fennel

  • 1 fennel bulb, thickly sliced
  • 4 cups water
  • 2 T Pernod
  • 1 sprig rosemary
  • 1 sprig thyme
  • 2-inch slice lemon peel
  • 2-inch slice orange peel
  • salt
  • pepper
DIRECTIONS
  1. Put 1 fennel in a pot; cover with water, Pernod, rosemary, thyme, lemon peel, orange peel, salt and pepper. Simmer over medium heat 45 minutes, until fennel is very tender.
