Picadillo (Cuban beef hash)

INGREDIENTS
  • 3 tb corn oil
  • 2 Medium Potato, cubed
  • 2 lb Lean ground beef
  • 1 ea Onion minced
  • 1 ea Garlic clove minced
  • 1 can Tomato sauce
  • 1/2 c Pimento-stuffed Olives
  • 1/2 c Raisins
  • 1/2 ts Oregano
  • 1/2 ts Thyme
  • Salt & pepper to taste
DIRECTIONS
  1. Heat oil in a large skillet. Add beef & saute until lightly browned, stirring to break up any lumps. Add onion & garlic and saute for 5 mins. longer. Add all remaining ingredients. Mix well & simmer, uncovered, over moderate heat for about 20 mins.
  2. Serve this over white rice.
