Picadillo (Cuban beef hash)

INGREDIENTS
- 3 tb corn oil
- 2 Medium Potato, cubed
- 2 lb Lean ground beef
- 1 ea Onion minced
- 1 ea Garlic clove minced
- 1 can Tomato sauce
- 1/2 c Pimento-stuffed Olives
- 1/2 c Raisins
- 1/2 ts Oregano
- 1/2 ts Thyme
- Salt & pepper to taste
DIRECTIONS
- Heat oil in a large skillet. Add beef & saute until lightly browned, stirring to break up any lumps. Add onion & garlic and saute for 5 mins. longer. Add all remaining ingredients. Mix well & simmer, uncovered, over moderate heat for about 20 mins.
- Serve this over white rice.
