Picnic Pasta Salad

INGREDIENTS
  • 1 box tricolor rotini
  • 1 head of lettuce
  • 1 pound of cherry tomatoes, halved
  • 1 red onion, diced
  • 1 pound ham cubes
  • 1 small can of black sliced olives
  • 1 pound of soy/milk mozzarella, cubed
  • balsamic vinegarette dressing
DIRECTIONS
  1. 1 box tricolor rotini
  2. 1 head of lettuce
  3. 1 pound of cherry tomatoes, halved
  4. 1 red onion, diced
  5. 1 pound ham cubes
  6. 1 small can of black sliced olives
  7. 1 pound of soy/milk mozzarella, cubed
  8. balsamic vinegarette dressing
  9. 1.) Cook the rotini.
  10. 2.) Halve the cherry tomatoes, dice the onion, cube the mozzarella and chop the lettuce.
  11. 3.) When the rotini is done, toss all the ingredients together and coat with the dressing.
  12. I like to serve this at picnics with a loaf of French bread and beef pies.
