Pico de Gallo
INGREDIENTS
  • Servings: 4 cups

  • 2 large tomatoes, chopped
  • 1 large bunch of Cilantro (approx 1/2- 3/4cup), roughly chopped
  • 1 large onion, chopped
  • 1 lime
  • 1-2 Jalapeno peppers, seeds removed, chopped
  • Sea salt, to taste
DIRECTIONS
  1. Mix the onion, tomato, hot pepper, and Cilantro in a bowl and squeeze fresh lime juice on top. Stir well and then season with kosher salt to taste.
  2. Use in taco bowls, tacos, fajitas, or just enjoy with some of your favourite nacho chips!
  3. Seal in an airtight container to keep it fresh- it keeps 24 hours or so.
