Pineapple Cake

INGREDIENTS
  • Cake
  • 2 Cups flour
  • 2 Cups Sugar
  • 1 1/2 teasp. soda
  • 2 eggs
  • 1 large can crushed pineapple
  • with juice
  • 1 Cup choped pecans
  • Cream Cheese Icing
  • 8oz. cream cheese (softened)
  • 2 Cups powdered sugar
  • 1 tsp. vanilla
  • 1 stick margarine (softened)
DIRECTIONS
  1. Combine all cake ingredients- Put in greased 9x13 pan.
  2. Bake 350 until done. 30-40 minutes.
  3. Frost with cream cheese icing.
RECIPE BACKSTORY
This was given to me by an elderly lady where I attended church. She always brought it to our church functions. She called it Mexican Fruit Cake. I always think of something different when I think of Fruit Cake so I call it Pineapple Cake. It is a really moist good cake. Try it!!
