Pineapple Chicken Stir Fry

  • ¼ cup soy sauce
  • 2 tablespoons sugar
  • 1½ tablespoons cornstarch
  • 1 tablespoon cider vinegar
  • ½ cup chicken broth
  • 1 tablespoon ketchup
  • ½ teaspoon ground ginger
  • 2 garlic cloves, minced
  • 1 pound boneless skinless chicken breasts, cut into strips
  • 2 tablespoons vegetable oil
  • 1 (16-ounce) package frozen stir-fry vegetables
  • 1 (8-ounce) can pineapple chunks, drained (reserve juice for sauce)
  • 1 can sliced mushrooms
DIRECTIONS
  1. 1. In a small bowl, combine first eight ingredients and reserved pineapple juice; set aside.
  2. 2. In a skillet, stir-fry chicken in oil for 5 to 6 minutes. Add vegetables; stir-fry 3 to 4 minutes. Stir in pineapple chunks, mushrooms, and soy sauce mixture; heat through, stirring until thickened.
  3. 3. Serve over rice.
