Pineapple Drop Cookies
INGREDIENTS
- 1 cup brown sugar (packed)
- 1 cup white sugar
- 1 cup shortening
- 1 cup crushed pineapple, drained (save juice)
- 4 cups flour
- 1 tsp. salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 2 eggs
- 1 tsp. vanilla
- 1 tsp. pineapple extract or pineapple juice
- chopped walnuts, optional
DIRECTIONS
- Blend sugars, shortening and crushed pineapple together.
- Add dry ingredients (flour, salt, baking powder, soda) to blended ingredients.
- Mix well by hand, then add eggs, vanilla, (nuts and pineapple extract if desired).
- Mix again until smooth.
- Drop by spoonfuls on lightly greased cookie sheet. Bake 13 to 15 minutes at 350 degrees.
