Pineapple Drop Cookies
INGREDIENTS
  • 1 cup brown sugar (packed)
  • 1 cup white sugar
  • 1 cup shortening
  • 1 cup crushed pineapple, drained (save juice)
  • 4 cups flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 eggs
  • 1 tsp. vanilla
  • 1 tsp. pineapple extract or pineapple juice
  • chopped walnuts, optional
DIRECTIONS
  1. Blend sugars, shortening and crushed pineapple together.
  2. Add dry ingredients (flour, salt, baking powder, soda) to blended ingredients.
  3. Mix well by hand, then add eggs, vanilla, (nuts and pineapple extract if desired).
  4. Mix again until smooth.
  5. Drop by spoonfuls on lightly greased cookie sheet. Bake 13 to 15 minutes at 350 degrees.
RECIPE BACKSTORY
My grandmother made these cookies a lot when I was growing up. She always used chopped walnuts in hers, but I also like them with crushed macadamia nuts.
