Pineapple Pound Cake
  • 8 eggs
  • 2 cups butter (4 sticks/1 pound)
  • 1 tsp vanilla
  • 1 20 oz can crushed pineapple, undrained
  • 3 cups flour
  • 3 cups sugar
  • 1 tsp salt
  1. Cream sugar and shortening. Add eggs one at a time. Add flour and salt gradually. Stir in vanilla and pineapple.
  2. Bake in a greased and floured tube pan at 350 degrees for about 1 1/2 hours. Or bake in two greased and floured loaf pans for about 1 hour.
My DH really likes this pound cake. The pineapple mixed into the batter really makes for a tasty pound cake.
