Pineapple Upside Down Cake

  • 1 can sliced pineapple
  • 1 small jar maraschino cherries
  • 1 cup brown sugar
  • 3 tablespoons butter
  • 1 box mix of pineapple upside down cake
  • 3 large eggs
  • 1 cup water
  • 1/3 cup vegetable oil
  1. Preheat oven 325 degrees
  2. Place pan in the oven while it is preheating
  3. In a small sauce pan put brown sugar, butter and 1/2 cup of juice from the canned pineapple slices
  4. Mix gently
  5. Heat just until the butter is melted
  6. Put the pineapple slices on the side for now
  7. Prepare cake mix according to instructions
  8. Remove pan from oven when it is good and hot
  9. Be Careful!
  10. Pour the sugar mixture in the pan
  11. Arrange pineapple slices in the pan- be as creative as you like
  12. Next use the cherries to decorate the pineapple slices
  13. Pour cake batter on top
  14. Put in the oven for 30 minutes (when toothpick inserted comes out clean)
  15. Let cake set for a minute or two
  16. Flip on serving tray
  17. When you flip Be Careful
  18. Let the pan sit for a minute until it releases
  19. It will be slightly gooey and drippy
  20. Remember hot sugar is Hot! Be careful!
The cast iron pan makes an ordinary pineapple upside down cake extra special and the jewel is in the topping! Such sweetness!
