Pizza Casserole

  • 4 cups small shell pasta
  • 1 jar pasta sauce
  • 2 tsp. olive oil
  • 2 sliced onions
  • 4 cups sliced mushrooms (about 10 oz/300 g)
  • 1 tsp. dried Italian seasoning
  • 1/4 tsp. pepper
  • 1 1/4 cups shredded mozzarella cheese
  • 2 oz. thinly sliced pepperoni
  • 1/2 chopped sweet green pepper
DIRECTIONS
  1. In a large pot of boiling salted water, cook pasta for 6 to 8 minutes or until tender but firm.
  2. Reserving 1/2 cup of cooking water, drain pasta and return to pot.
  3. Stir in pasta sauce and reserved cooking water. Pour into an 11 x 7 inch baking dish.
  4. Meanwhile in a large skillet, heat oil over medium high heat: cook onions, mushrooms, seasoning and pepper, stirring often, for 10 to 15 minutes or until onions are golden.
  5. Spoon over pasta mixture.
  6. Sprinkle with half of the mozzarella.
  7. Cut pepperoni slices in half if large and arrange along with green pepper over the mozzarella. Sprinkle with remaining mozzarella.
  8. Bake in a 375 degree oven for 20 minutes or until bubbly
