Pizza Chicken Roll-Ups

  • 4 boneless skinless chicken breast halves
  • 12 pepperoni slices
  • 8 mozzarella cheese slices, divided
  • 1 can (15 ounces) pizza sauce
  • Minced fresh parsley, optional
DIRECTIONS
  1. Flatten chicken to 1/4-in. thickness.
  2. Place three slices of pepperoni and one slice of cheese on each.
  3. Roll up tightly; secure with toothpicks.
  4. Place in a greased 11-in. x 7-in. x 2-in. baking dish.
  5. Spoon pizza sauce over roll-ups.
  6. Cover and bake at 350° for 35-40 minutes.
  7. Uncover; top with the remaining cheese.
  8. Bake 5-10 minutes longer or until cheese is melted.
  9. Sprinkle with parsley if desired.
