Polenta with Cheeses

  • 8 cups water
  • 2 tsps salt
  • 1 & 3/4 cups polenta (cornmeal)
  • 1 cup Swiss cheese or Fontina
  • 1 cup diced mozzarella
  • 1/2 cup grated Parmesan
  1. Bring the water and salt to a full boil in a heavy saucepan. Gradually sprinkle in the polenta in a thin steady stream, stirring with a wooden spoon and being careful as it tends to splatter. Cook over low heat, stirring constantly until thickened. Stir in Fontina or Swiss and mozzarella cheeses, mixing well. Continue cooking over low heat for about 15 minutes, stirring frequently. Turn the polenta out on a heated serving dish. Sprinkle with Parmesan and drizzle with melted butter. Serve immediately as a luncheon dish with salad, or side dish with entree.
