Pommes Puree (Mashed Potatoes)

  • 2lb Yukon Gold Potatoes
  • 8oz butter
  • 1 quart 1/2 and 1/2
  • Salt to taste
  1. Put potatoes (skin on) in a pot and cover with water. Turn stove to high and boil potatoes until fork-tender while adding water as needed. About 45 mins.
  2. Cut butter into small pieces and set aside.
  3. Gently heat up the 1/2&1/2 to a simmer and turn off heat.
  4. When the potatoes are ready, take them out and cool as minimal as possible. Just enough so that you can handle it without burning yourself. It is important that the potatoes stay warm.
  5. If you have a food mill run the potatoes through it directly into a pot. If you do not have a food mill you will have to smash the potatoes with a masher. Don't be tempted to run the potatoes through a food processor or blender.
  6. On medium heat slowly fold in milk and butter while stirring the potatoes. Add salt incrementally to taste.
