Porcupine Meatballs

  • 1 lb. ground beef
  • 1/4 cup uncooked long-grain white rice
  • 1 slightly beaten egg
  • 1 tbsp. snipped or dried parsley
  • 2 tbsp. finely chopped onion
  • 1/2 tsp. salt
  • Dash of pepper
  • 1 10 % oz. can of condensed tomato soup
  • 1/2 cup water
  • 1 tsp. Worcestershire sauce
  1. Combine meat, rice, egg, parsley, onion, salt, pepper and 1/4 cup condensed tomato soup. Mix thoroughly; shape into about 20 small balls and place in a skillet. Mix remaining soup, water, and Worcestershire sauce, pour over meatballs. Bring to a boil; reduce heat, cover and simmer 40 minutes, stirring often. Serve with mashed potatoes or other favorite side dish.
