Pork and Potato Stew
  • 1 tablespoon oil
  • 1 pound pork tenderloin, diced
  • 1 1/4 cups carrots. sliced
  • 1 cup onions, sliced
  • 4 russet potatoes, peeled and diced
  • 3 tablespoons chicken boullion
  • 1 teaspoon dried pork seasoning
  • 4 1/4 cups water
  • 1 tablespoon cider vinegar
  • 3 tablespoons flour
  • 2 cups cabbage, thinly sliced
  1. Heat oil in a skillet over medium hight heat until hot, add the pork, carrots and onion; cook until the pork is no longer pink. Drain off the fat. Add the potatoes, bouillon, pork seasoning, 4 cups of water and the vinegar; mix well. Simmer for 30 minutes stirring occasionally. In a bowl, combine the remaining 1/4 cup of water and flour; beat until well blended. Add flour mixture to the stew, then add the cabbage; mix well. Cover and simmer another 10 minutes or until the stew has thickened, stirring occasionally.
