Portugese Pialia:
  • Servings: 4
  • 1 onion
  • fresh garlic/finely chopped
  • red pepper
  • saffron
  • 2 c. partially cooked rice
  • 1 frying chicken (cut up)
  • sliced smoked portugese sausage
  • 20 shrimp
  • chicken/shrimp broth
  • 1 c. wine
  1. Brown chicken in skillet. Use Pam. Brown onion, red pepper in skillet. Cut up in slices
  2. Portugese sausage. Add to chicken, onion, pepper, saffron mixture. Add 1 c. wine to
  3. skillet or pot. Then add 2 c. partially cooked rice. Cover w/ 2 c. chicken or
  4. shrimp broth. Cover and cook on medium heat for approx 35 minutes. Add shrimp about
  5. 15 minutes before mixture is done as shrimp cooks fast and can get rubbery if over
  6. cooked. Stir occassionally. Portugese Pialia is done when all ingredients are tender when
  7. pierced w/ a fork.
