Potato Chips Cookies

  • 1 cup butter-flavored shortening
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 2 eggs
  • 2 cups flour
  • 1 tsp baking soda
  • 2 cups crushed potato chips
  • 1 cup butterscotch chips
DIRECTIONS
  1. In a large bowl, cream the shortening and both of the sugars until light and fluffy
  2. Beat in the eggs
  3. Combine the flour and baking soda
  4. Gradually add to the creamed mixture
  5. Mix well
  6. Stir in the potato chips and butterscotch chips
  7. Drop by tablespoonfuls 2 inches apart onto an ungreased baking sheets
  8. Bake at 375 F for 10-12 minutes or until golden brown
  9. Cool for 1 minute before removing to wire racks
