Potato Latkes

INGREDIENTS
  • 4 large potatoes, grated
  • 4 Tbsp. grated onion
  • 1 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 1 egg, beaten
  • 3 Tbsp. flour or potato starch
  • 1/2 tsp. baking powder
  • vegetable oil for frying
DIRECTIONS
  1. Mix all ingredients together until very smooth.
  2. In pre-heated skillet, heat oil until ready for frying
  3. Drop potato mixture by tablespoonfuls into skillet
  4. Fry each side until browned and crisp
  5. Serve immediately for best results
