Potato Omelet

- 1 Tablespoon margarine
- 1/2 Onion, peeled & finely sliced
- 1 Large potato, finely sliced
- 2 Eggs
DIRECTIONS
- Melt margarine in a small frying pan and add sliced onion. Cook over a medium heat, stirring, until the onion is soft and golden brown. Add a few teaspoons of water and the potatoes. Cover and cook until soft. Beat eggs and a pinch of salt and pour over potatoes. Lift potatoes to allow some of the egg underneath. Cook both sides to desired firmness.
