Potato Pancakes

- Servings: a dozen snack sized finger pancakes

- Peeled potatoes - 6 medium Russetts
- 3 med eggs
- 1/2 cup canola oil
- 1/2 cup flour
- 1/2 cup coarse chopped ham or bacon
- 1/2 cup fine chopped onion
- 1 tsp salt
- 1 tsp baking powder
- garlic to taste
DIRECTIONS
- chop onion fine and add to a large mix bowl first. This stops potatoes from oxidising and turning brown. You could add a splash of vinegar to aid this.
- Add the cooking oil to the onion.
- Shred the potatoes into the onion/oil bowl.
- in a second bowl add the flour- salt- baking powder and garlic powder if so desired.
- add the chopped ham or bacon to the flour and toss to coat .
- add the flour to the wet mix potato bowl and mix it well.
- You will want a very thick mix and may need to add flour or milk to adjust the consistency.
- Grease a skillet and spoon in small finger cakes.
- Brown as desired or until the surface sheen dulls and flip.
