Potato Pizza

  • 1 Loaf frozen bread dough, thawed
  • 1/4 Cup olive oil
  • 1 Onion, diced
  • 1 Garlic clove, minced
  • 1 Pound waxy potatoes
  • 1/2 Cup heavy cream
  • 1/4 Cup grated Parmesan cheese
  • 1 Teaspoon dried rosemary leaves
  • 1/4 Teaspoon crushed red pepper flakes
DIRECTIONS
  1. On a floured surface roll out dough into a 15 inches circle to form the crust and place on a nonstick sprayed pizza pan and set aside. In a small skillet, warm oil and sauté onions 5 minutes and then add garlic and continue cooking 1 minute. Remove from heat and drain on a paper towel. Peel and slice potatoes and boil 15 minutes in salt water. Drain. Sprinkle pizza dough with onions, layer with potatoes, drizzle with cream and add seasonings. Bake 20 minutes in a preheated oven at 500 degrees F. Remove, drizzle with oil and Parmesan cheese. Slice.
