Potato Salad Colorado

- 6 c red potatoes
- 3 hard boiled eggs, diced
- 1 1/2 t salt
- 1/2 t pepper
- Dressing
- 1 1/2 c sour cream
- 1/2 c best foods mayo
- 1/4 c cider vinegar
- 1/2 c dill relish
- 3/4 t celery seed
- 3/4 t fresh thyme
- 3/4 t fresh rosemary, chopped
- 1 t dijon mustard
DIRECTIONS
- Boil potatoes whole in salted water, then dice
- Meanwhile, prepare dressing by thoroughly mixing all ingredients together. Chill
- While potatoes are still warm, toss with dressing
- Add hard boiled eggs, salt, and pepper.
- Refrigerate for at least 2 hours or overnight.
