Potato Salad

INGREDIENTS
  • 4 cups potatoes, cooked and cubed
  • 4 eggs, hardboiled and chopped
  • 1/2 cup celery, chopped fine
  • 1 medium sweet onion, chopped
  • 1/2 cup sweet pickles, chopped
  • 1/2 cup carrots, shredded
  • Dressing:
  • 1-1/2 cups mayo
  • 1 Tbsp vinegar
  • 1 Tbsp mustard
  • 1 Tbsp sugar
  • 3 Tbsp sweet pickle juice
  • 1 Tbsp celery seed
  • 1-1/2 tsp salt
  • 1/2 tsp pepper
DIRECTIONS
  1. Boil potatoes in salted wanter with skins on. When tender, cool in refrigerator before peeling and cutting into small, bite-sized pieces.
  2. Toss first 6 ingredients lightly in bowl. In another bowl, mix dressing ingredients and pour over the salad. Very gently, fold into salad. Chill in refrigerator until serving time.
