Potato Soup

INGREDIENTS
- 6 large potatoes, peeled and sliced thin
- 2 onions, finely chopped
- 1 carrot, grated
- 1 stalk of celery, diced
- 1 tsp. chopped parsley
- 5 c. of chicken broth*
- 2 tsp salt
- Dash of pepper
- 1 can evaporated milk
- * May substitute for 5 chicken bouillons and 5 cups of water
DIRECTIONS
- 6 large potatoes, peeled and sliced thin
- 2 onions, finely chopped
- 1 carrot, grated
- 1 stalk of celery, diced
- 1 tsp. chopped parsley
- 5 c. of chicken broth*
- 2 tsp salt
- Dash of pepper
- 1 can evaporated milk
- Cook all ingredients except milk in a large pot until all vegetables are tender. Then mash potatoes or beat with an electric mixer. Add evaporated milk and serve. This is great with a salad and garlic bread as a meal.
